Keftedes (Greek Meatballs)

Ingredients

  • 1lb Grass-fed Ground Beef
  • 1/3 Purple Onion
  • 4 Garlic Cloves (chopped)
  • Handful of Parsley

For Flavoring:

  • 1/2tbsp Paprika
  • 1tbsp Sumac
  • 1tsp Ground Cumin
  • 2tsp Real Salt
  • Black Pepper

Instructions

  1. Put purple onion, garlic, raw pistachio, and parsley in a food processor. Pulse few times till it becomes paste like texture.
  2. Add the parsley mixture to ground beef. Add 1 tbsp of paprika, 1 tbsp of sumac, 1 tsp of ground cumin.
  3. Mix till the fat from the meat starts to come out and everything starts to bind up.
  4. Let it rest in fridge for at least 30 mins up to 3 days.
  5. Take the meat out of the fridge and shape them into 2 inch log with a little dent in the center.
  6. Heat a pan over medium heat.
  7. Once the pan is warmed, pour 1 tbsp of oil.
  8. Lay the logs on the pan and cook about 3 mins each side to sear.
  9. Enjoy!

Notes:

  • Store in an air-tight container for up to 3 days in the fridge.

Serving suggestion:

Keftedes go very well with eggs, beet hummus, saffron rice, pickled onions, etc!
