Raw Carrot Salad

This raw carrot salad is a vibrant, nutrient-packed dish that supports digestion and overall well-being. Carrots are rich in beta-carotene, which promotes healthy skin and vision, while the combination of olive oil and lemon juice enhances nutrient absorption and provides a refreshing, light flavor.

Ingredients

  • 1 Carrot
  • 1 tbsp Olive Oil
  • 1/2 tbsp Lemon Juice
  • A pinch of Redmond Real Salt & black pepper

Instructions

  1. Prepare the carrot – Peel and julienne (or grate) the carrot into thin strips.
  2. Mix the dressing – In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
  3. Combine & toss – Pour the dressing over the carrot and toss well until evenly coated.
  4. Let it sit (optional) – For enhanced flavor, let the salad sit for 5-10 minutes before serving to allow the flavors to meld.
  5. Serve & enjoy! – Enjoy it fresh as a light side dish, or pair it with your favorite meal.

Tips & Notes:

  •  Add a pinch of cumin or paprika for extra warmth and depth.
  • Sprinkle some chopped parsley or cilantro for garnish.
  • Top with toasted nuts or seeds for a crunchy texture.
  • Letting the salad sit longer (30 minutes) will soften the carrot slightly and intensify the flavors.

Storage:

Store any leftovers in an airtight container in the refrigerator for up to 24 hours. However, it’s best enjoyed fresh for the crispest texture.
